Ingredients

  1. cleaned and pre-cooked tripe, cubed - 500 g
  2. light stock - 1 to 1.5 l
  3. full-fat yogurt - 4 tbsp
  4. wheat flour - 2 tbsp
  5. egg yolks - 2
  6. salt - 2 tsp
  7. garlic cloves - 3 (for garlic in vinegar)
  8. vinegar - 1 dl (for garlic in vinegar)

Instructions

  1. Cook the Tripe: Boil the cubed tripe in the light stock for 15 to 20 minutes.
  2. Prepare the Yogurt Mixture: In a bowl, mix together the yogurt, egg yolks, flour, and salt until smooth.
  3. Temper the Yogurt Mixture: Gradually add some of the hot soup to the yogurt mixture to equalize the temperatures.
  4. Combine and Simmer: Pour the tempered yogurt mixture into the pot with the tripe and stock. Let the soup simmer for about 10 minutes, stirring occasionally.
  5. Prepare Garlic in Vinegar: Chop or grate the garlic cloves and mix with the vinegar. Allow it to sit for at least 10 minutes to develop the flavor.
  6. Serve: Serve the soup with the garlic in vinegar, browned butter, chili flakes, pickled chilies, and day-old bread.
