Instructions
Prepare the Pumpkin: Cut open the sugar pumpkin and scoop out the seeds. Optionally, save the seeds for roasting as a snack.
Season and Roast: Drizzle both halves of the pumpkin with a little oil until well coated and sprinkle with salt. Poke holes in the skin to allow steam to escape. Place them upside down on a baking sheet.
Bake: Bake in a preheated oven at 350°F (177°C) for about 35 to 50 minutes. The pumpkin is done when it is tender and caramelized.
Puree: Turn the baked pumpkin into a puree by blending in a food processor or blender until smooth.
