- coriander seeds - 1/2 cup (dry roast)
- red chili - watch the video to see (adjust to spice preference)
- peppercorns - watch the video to see
- cumin seeds - 1 tbsp (dry roast)
- fennel seeds - 1 tsp (optional, dry roast)
- ginger powder - watch the video to see (optional, if using fresh ginger, dry roast till slightly dried out)
- garlic powder - watch the video to see (optional, if using fresh garlic, dry roast till slightly dried out)
- salt - watch the video to see (add a little, dry roast)
- turmeric powder - watch the video to see (add after cooling down roasted spices)
Instructions
- Dry Roast Spices: Add coriander seeds, red chili, and peppercorns to a pan and dry roast slowly to activate the aromatic oils.
- Add Remaining Spices: Introduce cumin seeds and optional fennel seeds to the pan and continue to dry roast.
- Add Ginger and Garlic: If using fresh ginger and garlic, add now and dry roast until slightly dried out. Alternatively, use ginger and garlic powder.
- Cool and Blend: Let the roasted spices cool down, then add turmeric powder and blend into a fine curry powder.
