Prepare Spice Mix: Dry roast pepper, fenugreek seeds, cinnamon, cloves, and coconut powder. Blend into a fine powder.
Cook Eggplant with Spices: In a pan, heat ghee, add mustard seeds, cumin seeds, urad dal, chana dal, onions, and brinjal. Cook until the eggplants are slightly cooked.
Add Rice and Serve: Add the prepared spice mix and cooked basmati rice, mix well, and serve hot.
