Ingredients

  7. U my stock cube - 1 cube (or chicken stock as alternative)
  8. peanut paste - watch the video to see (blended with tomato and onion to form peanut sauce)
  9. tomato - watch the video to see (blended with peanut paste and onion)
  10. tomato paste - watch the video to see (added to soup for color and flavor)
  11. water - watch the video to see (used for blending and cooking)
  12. garden eggs - watch the video to see (optional vegetable addition)
  13. pako (P Bell chili) or habanero chili - 1 large or few small (added near end for heat, adjust to taste)

Instructions

  1. Prepare spice mixture and marinate meat: Blend ginger, onion, chili, garlic, and U my stock cube into a spice mixture. Marinate chicken and rabbit (optional) in this mixture. Marinate overnight if possible, or proceed immediately.
  2. Steam the meat: Steam the marinated chicken and rabbit gently in their own juices for about 10 minutes to infuse flavors without overcooking.
  3. Prepare peanut sauce: Blend peanut paste with tomato and onion, adding some water to create a smooth mixture. Cook this peanut sauce gently for 25 to 30 minutes, stirring frequently to prevent burning.
  4. Add tomato paste to meat: Add tomato paste to the steamed meat and cook for 3 to 4 minutes to infuse color and flavor.
  5. Combine peanut sauce with meat: Add the cooked peanut sauce to the steamed meat mixture. Mix well and bring to a gentle boil for about 1 minute.
  6. Add water or chicken stock and simmer: Add water or chicken stock to the soup, mix well, and simmer for about 20 minutes. Check meat doneness and remove chicken pieces if done.
  7. Add vegetables: Add garden eggs or preferred vegetables to the soup and continue simmering.
  8. Add chili and season: Add pako (P Bell chili) or habanero chili to desired heat level. Let simmer for another 5 minutes. Add salt to taste and mix well.
  9. Serve: Serve the groundnut soup hot with rice balls (omor), fufu, or other preferred starchy sides.
