Ingredients

  1. fava beans - 200 g
  2. onion - 1
  3. water - 900 g
  4. vegetable cube - 1
  5. garlic - 2 cloves
  6. white wine vinegar - 20-30 g
  7. olive oil - 75 g
  8. salt - to taste
  9. pepper - to taste
  10. frozen salted cod - 800 g (5 pieces)
  11. all-purpose flour - 100 g
  12. cornflour - 100 g
  13. sunflower oil - 1 L (for frying)
  14. lemon slices - to taste (for serving)
  15. chopped parsley - to taste (for serving)

Instructions

  1. Prepare the fava beans: Rinse the fava beans, add to a pot with chopped onion, water, and vegetable cube. Cook until soft, about 40 minutes.
  2. Make the garlic fava puree: Blend the cooked fava beans with garlic, vinegar, olive oil, salt, and pepper until smooth.
  3. Prepare the cod: Coat the cod pieces in a mixture of flour and cornflour, then fry in hot sunflower oil until crispy.
  4. Serve: Serve the fried cod with the garlic fava bean puree, garnished with lemon slices and chopped parsley.
