  3. green chili peppers - 2 (sliced)
  4. garlic - 3 cloves (minced)
  5. ginger - 1 tablespoon (minced or grated)
  6. berbere spice - 1 tablespoon (Ethiopian spice blend)

  9. oil - 2 tablespoons (for frying, preferably niter kibbeh or vegetable oil)

Instructions

  1. Prepare Ingredients: Cube the beef into bite-sized pieces. Slice the onion and green chili peppers. Mince the garlic and ginger.
  2. Heat Oil and Sauté Aromatics: Heat oil in a pan over medium-high heat. Add the sliced onions, garlic, and ginger, sautéing until fragrant and onions are translucent.
  3. Add Beef and Spices: Add the beef cubes to the pan and stir-fry until they start to brown. Sprinkle berbere spice, salt, and black pepper over the beef. Continue to cook, stirring frequently.
  4. Add Peppers and Cook Through: Add the sliced green chili peppers and cook until the beef is fully cooked and dry-fried, with no excess liquid remaining.
  5. Garnish and Serve: Optionally garnish with fresh rosemary or preferred herbs. Serve hot with injera or rice.
