  2. Water - as required (for soaking and boiling fries)

  4. Boiling water - as required (for parboiling fries)
  5. Salt - 1 tablespoon (for boiling water)
  6. Sugar - 1 tablespoon (for boiling water)
  7. Cooking oil - watch the video to see (for frying fries and cooking chicken)
  8. Garlic - 2 tablespoons (chopped)
  9. Chicken boneless - 250 grams (small cubes)
  10. Soy sauce - 1 tablespoon (for chicken marinade)
  11. Paprika powder - 1 teaspoon (for chicken seasoning)
  12. Salt - 1/2 teaspoon (for chicken seasoning, or to taste)
  13. Black pepper powder - 1/2 teaspoon (for chicken seasoning)
  14. Dried oregano - 1 teaspoon (for chicken seasoning)
  15. Tomato ketchup - 1 tablespoon + 1/4 cup (for chicken and sauce)
  16. Mayonnaise - 3/4 cup (for dynamite sauce)
  17. Chili garlic sauce - 2 tablespoons (for dynamite sauce)
  18. Sriracha sauce - 2 tablespoons (for dynamite sauce)
  19. Honey - 1 tablespoon (for dynamite sauce)

Instructions

  1. Prepare Potato Fries: Cut peeled potatoes into 1.3 cm thick fries using a french fries cutting machine. Soak fries in water with ice cubes for 10 minutes, then strain.
  2. Parboil Fries: Bring boiling water with salt and sugar to a boil. Add potato fries and boil until half-done, approximately 6-8 minutes. Drain and pat dry with kitchen towels. Let cool.
  3. Fry Potato Fries: Heat cooking oil in a pot and fry potato fries for 3 minutes. Remove and rest for 5 minutes. Heat oil again and fry fries until light golden and crispy. Set aside.
  4. Prepare Chicken: In a frying pan, heat 1 tablespoon cooking oil and sauté chopped garlic. Add chicken cubes and cook until color changes. Add soy sauce, paprika powder, salt, black pepper powder, and dried oregano. Mix well and cook for 6-8 minutes. Add 1 tablespoon tomato ketchup, mix, and set aside.
  5. Prepare Dynamite Sauce: In a bowl, combine 1/4 cup tomato ketchup, 3/4 cup mayonnaise, 2 tablespoons chili garlic sauce, 2 tablespoons sriracha sauce, and 1 tablespoon honey. Mix until well combined and set aside.
  6. Assemble and Serve: On a serving platter, place potato fries. Drizzle prepared dynamite sauce over fries, add cooked chicken on top, drizzle more sauce, and garnish with green onion leaves. Serve immediately.
