Instructions

  1. Prepare and cook the ground beef: Heat a pan until smoking hot. Season the ground beef with salt and pepper. Add a touch of sesame seed oil and grape seed oil to the pan. Add the beef in small bits, breaking it up and letting it get crispy over 3-4 minutes. Stir occasionally to ensure even cooking and crispiness.
  2. Add aromatics and flavorings: Add minced garlic and freshly grated ginger to the beef. Stir well to combine and cook briefly until fragrant. Add a teaspoon of dark soy sauce and a small amount of fish sauce. Drizzle a bit more sesame oil and sprinkle chili flakes to desired spice level. Continue to break up beef and cook until caramelized and crispy.
  3. Add fresh scallions and sesame seeds: Turn off the heat and sprinkle thinly sliced scallions and toasted sesame seeds over the beef. Let it sit to absorb flavors.
  4. Make the peanut sauce: In a saucepan, combine 200 ml coconut milk and two large dollops of soft peanut butter. Bring to a boil, whisking to combine and thicken. Add fish sauce (about 1 tablespoon), a touch of dark soy sauce, a teaspoon of honey, and chili flakes. Adjust seasoning and heat until sauce thickens nicely.
