A traditional Indian sweet, Mohanthal, enriched with dry fruits and made special for the festival of Holi.

Ingredients

  1. Tata Sampann Gram flour - 500 grams
  2. Milk - 80 ml (for crumbled gram flour mixture)
  3. Ghee - 2 tablespoons (for crumbled gram flour mixture)
  4. Sugar - 1 ⅓ cups (for sugar syrup)
  5. Water - 1 ½ cups (for sugar syrup)
  6. Ghee - 1 ½ cups (for Mohanthal)
  7. Milk - 200 ml (for Mohanthal)
  8. Cardamom powder - 1 teaspoon
  9. Nutmeg - A pinch (grated)
  10. Tata Sampann Cashews - ⅓ cup (slivered)
  11. Tata Sampann Almonds - ⅓ cup (chopped)
  12. Golden vark - to taste (for garnish)
  13. Rose petals - to taste (for garnish)

Instructions

  1. Prepare Crumbled Gram Flour Mixture: In a pan, add milk and ghee and give it a quick boil. In a handi, add Tata Sampann gram flour, pour the mixture and mix well. Rub with hands until crumbly in texture. Transfer to a bowl and rest for 10-15 minutes. Sieve through a strainer for further use.
  2. Prepare Sugar Syrup: In a handi, add sugar and water. Simmer until thickens to one string consistency. Set aside for further use.
  3. Make Mohanthal: In a kadai, add ghee. Once hot, add prepared crumble mixture and cook until golden in colour. Add milk and sauté until golden brown. Add prepared sugar syrup and cook until mixture thickens. Finish with cardamom and nutmeg powder, mix well.
  4. Finalize Mohanthal: Transfer mixture to a tray and spread evenly. Dry roast Tata Sampann cashews and almonds for a minute and top it on Mohanthal. Let it set for a while.
  5. Garnish and Serve: Cut into desired shape, place on serving dish. Garnish with golden vark and rose petals. Serve warm.
