Instructions

  1. Prepare Beef: Cut the beef into thin slices. Marinate with oyster sauce, light soy sauce, cooking wine, water, white pepper, sugar, baking soda, and cornstarch. Mix well.
  2. Prepare Vegetables: Wash the bok choy and set aside to drain. Mince garlic, chop ginger, carrot, and green onion. Cut the bok choy into smaller pieces.
  3. Make Stir-Fry Sauce: Combine oyster sauce, white soy sauce, dark soy sauce, rice wine, sugar, white pepper, and chicken bouillon.
  4. Cook Bok Choy: In a hot wok, add oil and garlic, followed by the bok choy. Add some cooking wine, then water, and cover to steam. Season with sugar and salt, then set aside.
  5. Cook Beef: In an empty hot wok, add oil and the rest of the aromatics. Add the beef, letting it sear on one side before flipping and stirring.
  6. Combine and Finish: Add the bok choy back into the wok with the beef. Stir fry everything together. Finish with a bit of sesame oil and plate.
