Prepare Vegetables: Mix 1 kg of various vegetables with 100g of salt. Leave for an hour.
Wash Vegetables: Wash the vegetables multiple times with water to reduce the saltiness. Then, place them in a basket to drain.
Marinate with Sugar: Marinate the vegetables with 350g of sugar. Use a heavy tool to press down on the vegetables for about 12 hours until the sugar dissolves and the vegetables release water.
Prepare Pickling Solution: Take the sugar water, add it to a pot, and mix with half a liter of fish sauce. Boil the mixture, skimming off any foam. Let it cool completely.
Jar the Vegetables: Pour the cooled pickling solution over the vegetables in the jar. Leave it for a few days until ready to eat.
Preserve: For long-term preservation, ensure all water is gone and the mixture is boiled. Let it cool completely, then pour it back over the vegetables in the jar. The pickled vegetables can be kept for several months without spoiling and will remain crispy and delicious.
