  3. chipotle chili in adobo - watch the video to see (amount to taste)
  4. tomatoes - 5 (5 whole tomatoes)
  5. onion - 1/2 (1 whole onion, only half used)
  6. pasote sprigs - watch the video to see (a few sprigs)
  7. garlic cloves - 4 (4 cloves)
  8. salt - watch the video to see (to taste)
  9. water - watch the video to see (a little, for grinding sauce)

Instructions

  1. Prepare tomatoes: Roast the tomatoes lightly until cooked but not overly charred.
  2. Prepare onion and garlic: Chop half an onion and 4 garlic cloves into small pieces for grinding.
  3. Grind onion, garlic, and pepper: In a mortar, grind the chopped onion, garlic, black pepper, and a little salt until well combined.
  4. Season chicken: Spread the ground onion, garlic, pepper, and salt mixture evenly over the 2 kg of washed chicken using your hands.
  5. Brown chicken: Heat a pot and brown the seasoned chicken pieces evenly on all sides.
  6. Prepare chipotle tomato sauce: Chop the roasted tomatoes and chipotle chili in adobo into smaller pieces. Grind them together with a little water, salt, and pasote sprigs until smooth.
  7. Cook chicken in sauce: Add the chipotle tomato sauce to the browned chicken in the pot. Cook until the chicken is fully cooked and tender.
  8. Serve: Serve the chipotle chicken hot, ideally with white rice or beans.
