  7. onion - 1/2 (finely chopped)

  9. tomato puree - 1 tablespoon (1 tablespoon)
  10. white wine - 1 glass (1 glass)

  12. demi-glace - watch the video to see
  13. cream - watch the video to see (to finish)

Instructions

  1. Prepare and Cook Chicken: Season the chicken crown and cook with butter, bay leaf, thyme, and garlic. Finish in the oven at 180°C for 15 minutes.
  2. Prepare Tomatoes and Mushrooms: Peel, deseed, and chop tomatoes. Finely chop onion and mushrooms.
  3. Build the Sauce: Remove chicken from pan. Add onions and mushrooms to the pan, followed by tomato puree, white wine, and brandy. Reduce.
  4. Finish the Sauce: Add demi-glace and reduce to desired consistency. Finish with cream, herbs, and pepper.
  5. Serve: Serve the sauce over the cooked chicken crown.
