  9. red beans - 1 1/2 cups (canned, rinsed)
  10. coconut milk - 1 1/2 cups (canned)
  11. bell peppers - watch the video to see
  12. fresh thyme - watch the video to see
  13. scotch bonnet pepper - 1 (optional for heat)

Instructions

  1. Brown Oxtail: Brown marinated oxtail pieces in oil, then add marinade and water.
  2. Add Spices: Add diced tomato, allspice, bay leaves, and ginger. Bring to a boil, then simmer.
  3. Cook Oxtail: Braise oxtail for 2.5 hours, then add red beans, coconut milk, bell peppers, thyme, and scotch bonnet pepper. Cook for an additional 30 minutes.
  4. Finish and Serve: Adjust seasoning, garnish with scallion, and serve with the sauce thickened to preference.
