Instructions

  1. Prepare Pork Medallions: Cut pork loin into medallions. Season both sides with salt, freshly ground black pepper, and a light dusting of five-spice powder.
  2. Brown the Pork: Heat vegetable oil in a pan until hot. Brown the pork medallions on both sides quickly, leaving the inside slightly undercooked as they will finish cooking in the sauce.
  3. Prepare Vegetables: While pork browns, cut carrot into thick diagonal diamond shapes, slice green onions diagonally into rhomboidal shapes, cut zucchini similarly, and slice garlic cloves thinly.
  4. Stir-fry Vegetables: Remove pork from pan. Add the prepared vegetables to the same pan and stir-fry quickly over medium-high heat, seasoning lightly with salt. The vegetables should remain crunchy (al dente).
  5. Prepare Sauce: Add frozen pureed pineapple to the pan with vegetables. Lower the heat. Add thinly sliced fresh ginger, soy sauce, hoisin sauce, a little more five-spice powder, and sesame oil as flavoring.
  6. Finish Cooking Pork in Sauce: Return the browned pork medallions to the pan with the sauce and vegetables. Simmer for about 2 minutes until pork is fully cooked in the center and the sauce thickens. Optionally, add diluted cornstarch to thicken if needed.
  7. Final Seasoning and Garnish: Taste the sauce and adjust salt if necessary. Garnish with fresh cilantro before serving.
