Instructions

  1. Prepare the aromatic oil: Combine chicken fat, pork fat, and corn oil in a pot. Add onions and anchovies to infuse flavors. Strain the mixture over yuzu.
  2. Make the shio tare: Combine salt, sugar, sake, mirin, and chintan broth in a pot. Heat until the salt and sugar dissolve. Finish with a touch of vinegar and yuzu juice.
  3. Assemble the ramen: Warm the serving bowl with hot stock, then discard. Add 480 ml of stock, followed by 40 ml of shio tare and 30 ml of aromatic oil. Add cooked noodles, ensuring to drain them well to avoid diluting the broth. Top with desired toppings.
