Ingredients

  1. egg white tofu - 2 blocks (Fortune brand recommended) (diced)
  2. mayonnaise - 3 tbsp (for mixing)
  3. Dijon mustard - 1 tsp (for mixing)
  4. salt - watch the video to see (to taste)
  5. black pepper - watch the video to see (to taste)
  6. paprika - 1/2 tsp (for mixing)
  7. gherkin relish - 1 tbsp (chopped)
  8. scallions - 2 (chopped)
  9. Japanese milk bread - 4 slices (slices)
  10. butter - watch the video to see (for toasting bread)

Instructions

  1. Prepare ingredients: Chop scallions and gherkin relish finely. Dice the egg white tofu and transfer to a large mixing bowl.
  2. Make mayo mixture: In a small mixing bowl, combine mayonnaise, Dijon mustard, chopped gherkins, salt, pepper, and paprika. Mix until smooth.
  3. Combine tofu and mayo mixture: Add the mayo mixture into the bowl with diced egg white tofu. Add chopped scallions and mix evenly.
  4. Toast bread: Melt butter in a pan over medium heat. Toast one side of each slice of Japanese milk bread until golden.
  5. Assemble sandwich: Spread the egg tofu mayo mixture over the toasted side of the bread slices. Cut the sandwich down the middle and serve.
