Ingredients

  5. tomatoes - watch the video to see (preferably A grade, crushed by hand)
  6. salt - watch the video to see (to taste)

  8. frozen peas - 80g (80g, optional)
  9. fresh pasta - watch the video to see (such as tagliatelle, pappardelle, or your choice, cut if using lasagna sheets)
  10. Parmesan cheese - watch the video to see (for serving, optional)
  11. extra virgin olive oil - watch the video to see (for finishing)

Instructions

  1. Prepare Ingredients: Finely slice the garlic. If using chili, adjust to taste and prepare accordingly. Crush the tomatoes by hand. Chop the basil stalks and prepare leaves for later use.
  2. Cook Garlic and Chili: Heat a pan with a lug of olive oil. Add the garlic and chili, cooking for about 30 seconds or until fragrant.
  3. Add Tomatoes and Basil Stalks: Add the crushed tomatoes and chopped basil stalks to the pan. Season with salt and pepper to taste.
  4. Boil Pasta: In a separate pot, boil the pasta according to package instructions or until al dente. If using lasagna sheets, cut them into your desired pasta shape before boiling.
  5. Combine and Finish: Add the frozen peas to the sauce, if using. Once the pasta is cooked, drain and add it to the sauce. Toss to combine, adding pasta water if needed to achieve desired consistency. Finish with basil leaves, a drizzle of extra virgin olive oil, and grated Parmesan cheese if desired.
