Truffle Parm Beef Hump

Beef “Hump” comes from a special breed called Brahmam cattle. They have a distinctive hump on their neck that looks really similar to what you’d see on a camel and I’ve been dying to get my hands on one! It’s a cut that is completely full of connective tissue, so low and slow cooking is critical. The result was very similar to brisket, but perhaps more beefy.
