This is how the best stocks on the planet are made. Here’s how you can make the best stock, from scratch. A stock is usually composed of: Protein (which can be roasted or not) And Aromatics. That's a basic stock. But it isn’t overly clear is it… Let’s clarify that stock 😉 Example: veal (roasted), onion, carrot, celery = brown stock. Another example: veal (not roasted), onion, carrots, celery = white stock. Or: fish, leeks, onion mushrooms = fish stock. These are the classics. But you can do whatever you want. Remember! Different stocks need different cooking times. Beef stock: 8 to 12 hours Veal stock: 4 to 6 hours Chicken stock: 1 to 2 hours Fish stock: 1 hour Seafood stock: Roughly 30 minutes. ——————— Learning how to make Kitchen Brown Stock and White Stock is a mandatory step in the life of a cook.
