This dish has nostalgia written all over it. Apart from the inclusion of purple Cabbage (instead of the normal pearl looking ones), this was a meal prepared during my childhood with my Mum. The difference in this Jollof was the type of meat used. During the famine season of the 80’s in #Ghana (hands up if you remember it) #Mum used dried cured beef for her Jollof rice. The flavour was rather unique and I recreated it today. Enjoy!
