The BEST Apple pie ever ⚫️

Recipe Ingredients **Pastry** - 300g flour - 225g unsalted butter - 10g sugar - 5g salt - 80ml ice cold water **Apple filling** - 8 Granny smith apples - 120g unsalted butter - 25g flour - 200g sugar - 60ml water ### Method **Pastry** 1. In a food processor, blitz together the flour, salt and sugar. 2. While your butter is still cold, cut into small cubes and place in the food processor with the rest of the ingredients. Blitz this until it becomes like a sandy consistency. 3. Pour in your ice cold water and turn the food processor on again until the dough comes together. 4. Turn this out onto your bench and knead for 1-2 minutes. Split your pastry into two and put in the fridge to cool. **Apple filling** 1. Melt the butter in a pot and whisk in the flower. 2. Add the cold water and whisk until smooth and silky, let this cool. 3. Peel, core and slice for your apples. 4. Add them to the caramel mixture and make sure you mix them well. **Assemble your pie** 1. Once the dough has rested for 1 hour in the fridge, take one part of the dough out and roll it out on a flowered bench until it’s around .5 cm thick. 2. Line a 20 cm pie dish with your pastry and place it back in the fridge. 3. After 20 minutes you can fill the pie with your apple mixture. 4. Roll out the your other pastry to .5 cm thick. 5. Then, cut it into 3 cm thick strips and create a lattice across the pie. 6. Whisk together one egg and brush it over the pie, sprinkling with sugar after. 7. Bake it in 180° oven for 40-45 minutes or until golden brown and the apples are cooked.
