I’ve always been intimidated by baking bread. When cooking a piece of meat on the grill you’re able to see it, touch it, and make adjustments as you cook. But with bread you need to be extremely precise with measurements and once it’s in the oven, you lose control of the process and hope for the best. But I recently did some baking with the bread master himself @bengingi and it really changed the way I look at the whole process. It’s like a mini evolution that starts with some dry ingredients, and step by step it literally grows into something really incredible. While yes some exact measurements are necessary, it really is more of an art than a science. A lot of it comes down to “feel” and there are actually many ways to control the process. Once in the oven, Ben was keeping a close eye on the color and even added water to the base of my oven at one point to incorporate moisture.
