This was my first time cooking with a whole live scallop. The biggest surprise was how many components there are… we’re all used to seeing the delicious white flesh of a scallop, but turns out they also have a mouth, digestive track, gills, and even eyes. Apparently they have up to 200 of them (that is a trivia question I would have had no chance on 😂). Combined with a simple pasta and really fun plating, this came out better than I could have hoped.
