Peri peri chicken 🐔 Ingredients - 1 chicken, cut in half and the back removed - 1 white onion, diced - 3 cloves garlic - 2 birds eye chilis - 1 tsp smoked paprika - 2 tsp oregano - 1 tbsp red wine vinegar - juice of a lemon - 1 tsp salt - 1 tbsp hot honey Method 1. Blend everything (except the chicken…) 2. Rub all over the chicken and leave to marinade for 2 hours in the fridge. 3. To cook, you can place it in a hot oven (250-300c) like I did or grill it on the BBQ, either way I think you really want to have good char on this one so don't hold back. In the oven it will only take about 25-30 minutes but I suggest you use a temperature probe because you are looking for an internal temp of 70c at the thickest part before you take it out of the oven. 4. Make sure you rest the chicken for at least 10 minutes. 5. Serve with some spicy rice and a salad and enjoy!
