Kinilaw is a raw seafood dish and preparation native to the Philippines that my mate chef Gary from ZubuChon taught me. White flesh fish with fresh coconut cream and then seasoned with fish sauce and coconut vinegar - it was delicious. We have spent the last 10 days here in the Philippines and it’s been amazing, the food is delicious and the people super friendly and welcoming.
