Prepare the biga: 400ml. Water, 400gr. Flour, 5gr. Yeast dry, 5gr. Honey. (rest 1h room temp. then 24hours in the fridge) After 24 hours prep the Pizza Dough Add on biga: All biga, 200ml Cold Water, 30gr. Salt, Mix in the mixer for 10 min. (rest for 1 hour, Then make into Balls and rest 30 min) Part bake it all at max temp in home oven 250c' for about 5-7 min . Let it cool down then put it in the freezer for what ever time u need to.
