Takeokashiki Ramen comes from a shop in Chiba prefecture called umenoya (梅の屋)and is a very interesting style of ramen for two specific reasons. One, it doesn't require any soup, its made with just hot water and two, they don't use fresh noodles, they use dried noodle blocks. In this video I tried to recreate that bowl with what I could get locally here in the US. The resulting bowl of ramen wasn't mind-blowing, it had pretty basic flavors but it really feels like a throwback to old school post war Japan ramen.
