How to germinate CORN FOR ASAANA / ALIHA (Fermented Corn Drink) -Ndudu On one of my visits to Malam Atta Market (Accra, Ghana), I chanced upon an amazing lady drying these dark looking Corn Kennels. Naturally I had to ask questions and she explained it’s what she uses for ASAANA (a fermented caramelised corn drink which is popular in Ghana and Togo). The first recipe I attempted on this elusive recipe was from my taste buds and piecing together random information from individuals who knew a thing or two about the recipe. Finally I have the perfect recipe. Starting this 2 part series by germinating the kernels and drying them just as the lady instructed. Enjoy!
