Fermented locust beans locally known as Dawadawa in Ghana or Iru in Nigeria holds a strong umami flavour. The flavour profile is best described as a blend of mushrooms and fish sauce. The inclusion of Basil adds a floral note to the intense umami flavour of fermented locust beans. Fermented locust beans needs to be used sparingly due to its intense flavour. A little goes a long way. Creating new natural flavours for my dishes is my ‘thing’. 😉 Introducing a #Vegetarian flavour packed Rice. This is not any ordinary #Rice ooh!
