Costa Rican Ceviche with @anasofiafehn

Costa Rican Ceviche Ingredients - 800g (1 lb 12 oz) white fish like snapper or mahi mahi, diced into 1.5cm (1/2 inch) cubes - 1/2 red capsicum (bell pepper), diced - 10 breakfast radishes, diced - 1 punnet cherry tomatoes, cut in half - 1/2 bunch coriander, sliced - 1 red onion, sliced - 2 green chillies, diced - 3 limes, juiced - 250ml (1 cup) ginger ale - Salt to taste - Corn chips, to serve Method 1. Add all the ingredients (apart from the corn chips) to a bowl and mix well. Leave in the fridge for at least 1 hour. 2. Serve with the corn chips and you're good to go!
