Recipe The below is for 2 people as a starter or share dish Ingredients - 300g beef fillet (or sirloin works well) - 50ml ponzu - 1 spring onion, sliced thin and separated into whites and greens - 4 cloves garlic - 10ml chilli oil - Salt to taste - Peanut oil for frying garlic and sealing steak Method 1. Season your steak well on all sides. 2. In a frypan over high heat, sear the beef on all sides until you have a good crust all over but keep the meat rare in the centre. 3. Once you have a good sear, remove from the pan and set aside to rest for 10-15 minutes. 4. While this is resting, slice your garlic very thin on a mandolin and heat some oil over medium-low heat to around 150°c. 5. Fry your garlic in the oil for 3-4 minutes or until nice and golden all over. Remove and place on a paper towel and season immediately with salt. 6. Slice your spring onion very thin keeping the whites and green separate. 7. To serve, slice your rare beef nice and thin, and arrange it neatly on a plate. 8. Pour the ponzu over the top followed by some chilli oil, spring onion whites, spring onion greens and finally the fried garlic. Enjoy!
