Beef Tallow Fudge Ingredients: - 400g (14 oz) sugar - 150ml (5 fl oz) milk - 25g (0.88 oz) cocoa powder - 25g (0.88 oz) golden syrup - 1/2 tsp salt, plus extra for garnish - 60g (2.1 oz) beef tallow Method: 1. In a pot, combine the sugar, milk, cocoa powder, golden syrup, and 1/2 tsp of salt. Cook this mixture over medium heat until it reaches 115°C (239°F). Once it reaches this temperature, remove the pot from the heat. 2. Add the beef tallow and let the mixture sit undisturbed for 10 minutes. 3. After 10 minutes, beat the mixture well until it's smooth and thickened. Then, pour it into a tray lined with parchment paper and press to the desired thickness. Sprinkle a little bit of salt over the top for garnish. 4. Allow the fudge to cool in the fridge until it sets. 5.
