Arepas This super tasty Venezuelan staple, Reina Pepiada arepas, really blew my mind. They're really not too hard to make and super tasty. Credit to Luis Herrera Di Prisco (@luisguayaba on insta) for the recipe inspo Ingredients: - 600g (about 1.32 lbs) PAN White Corn Flour (Harina PAN Blanca) - 3 tbsp olive oil - 2 tbsp salt - 4 chicken breasts - 1 white onion - 3 cloves garlic - 1 bunch of coriander (cilantro) - 8 black peppercorns - 1 red onion, diced - juice of 3 limes - 180g (about 6.35 oz) mayonnaise - 4 dashes Worcestershire sauce - 6 dashes Tabasco sauce - 2 avocados, sliced Method: 1. In a bowl, combine 1100g (about 2.43 lbs or 4.63 cups) of water with the olive oil and salt. Stir until the salt dissolves. Gradually stir in the PAN corn flour until you have a smooth, soft dough. Mix for 2 minutes, then let it rest for 2-3 minutes. 2. With oiled hands, roll the dough into balls slightly smaller than tennis balls and place them on a tray. 3. Heat a cast-iron pan over medium-high. Flatten a dough ball in your palm until it's slightly larger than your hand. Cook in the pan for 4-5 minutes on each side. Once cooked, place on a rack to cool. Repeat with the remaining dough. 4. For the chicken filling, fill a large pot with water. Add quartered white onion, garlic, coriander roots, peppercorns, and a pinch of salt. Bring to a boil. 5. Add the chicken breasts to the pot. Poach for 30 minutes on low simmer. Turn off the heat and let the chicken cool in the pot for 20 minutes before shredding. Tip: After removing the chicken, boil the water again, cool it, and use it as a light chicken stock. 6. In a bowl, mix the shredded chicken with mayonnaise, lime juice, diced red onion, finely chopped coriander, Worcestershire sauce, Tabasco, and about 2 tbsp of the cooking liquid. 7. Taste and adjust the seasoning if necessary. 8. Preheat the oven to 250°C (about 482°F). Place the arepas on a tray in the oven for 5-6 minutes until they puff up slightly. 9. Cut open the hot arepas and fill them with the chicken mixture and sliced avocado. 10.
