Ingredients

  3. dry chutney - watch the video to see (used to avoid dirtying hands)
  4. spices for potato vada - watch the video to see (typically includes mustard seeds, turmeric, chili, garlic, ginger, coriander)
  5. gram flour (besan) - watch the video to see (for batter to coat potato vada)
  6. oil - watch the video to see (for deep frying)

Instructions

  1. Prepare the potato filling: Boil and mash potatoes. Temper mustard seeds and other spices in oil, add to mashed potatoes and mix well.
  2. Make the batter: Prepare a smooth batter using gram flour and water with a pinch of salt and turmeric.
  3. Form and fry vadas: Shape the spiced potato mixture into balls, dip in gram flour batter, and deep fry until golden and crisp.
  4. Assemble the vada pav: Slice the pav horizontally, place the hot vada inside, and sprinkle dry chutney on the inside of the pav.
  5. Serve: Serve hot with optional green chutney and fried green chili on the side.
