Ingredients

  1. lukewarm water - 250 ml (use 250ml or 1 cup)
  2. sugar - 4 g (4 grams or 1/2 tablespoon)
  3. dry yeast - 10 g (10 grams or 1 tablespoon)
  4. bread flour - 385 g (385 grams or 2 3/4 cups)
  5. salt - 1/4 tsp (1/4 teaspoon)
  6. olive oil - 1/2 tbsp (1/2 tablespoon for dough)
  7. semolina flour - watch the video to see (as needed for dusting)
  8. plain yogurt - 1 tbsp (1 tablespoon for topping)
  9. egg yolk - 1 (1 egg yolk for topping)
  10. olive oil - 1 tbsp (1 tablespoon for topping)
  11. nigella seeds - watch the video to see (as needed for topping)
  12. sesame seeds - watch the video to see (as needed for topping)

Instructions

  1. Activate yeast: In a bowl, combine lukewarm water, sugar, and dry yeast. Let it sit until frothy, about 5-10 minutes.
  2. Prepare dough: In a large mixing bowl, combine bread flour and salt. Add the yeast mixture and olive oil. Knead until a smooth dough forms.
  3. First rise: Cover the dough and let it rise in a warm place until doubled in size, about 1 hour.
  4. Shape the dough: Dust a surface with semolina flour. Punch down the dough and shape it into an oval or round flatbread typical of pide.
  5. Prepare topping: Mix plain yogurt, egg yolk, and olive oil. Brush this mixture over the shaped dough.
  6. Add seeds: Sprinkle nigella seeds and sesame seeds on top.
  7. Bake: Bake in the middle of a preheated oven at 200°C (390°F) for 10 minutes until golden and cooked through.
