Ingredients

  1. corn - 6 pounds (toasted)

  5. cocoa beans - 1 pound (roasted and peeled)
  6. white sugar - watch the video to see (optional, to taste)
  7. cow's milk - watch the video to see (can be substituted with water or used together)
  8. water - watch the video to see (optional, can be used instead of or with milk)

Instructions

  1. Toast the corn: Toast 6 pounds of corn in a pan, stirring continuously with a wooden spoon to avoid burning. Toast until the corn takes on a golden color and smells delicious.
  2. Add spices: Add sweet pepper, cloves, and cinnamon sticks to the toasting corn to infuse flavor. Continue stirring to combine well.
  3. Toast the cocoa beans: Toast 1 pound of cocoa beans separately until roasted.
  4. Remove cocoa shells: After roasting, peel the cocoa beans to remove the shells completely.
  5. Grind the ingredients: Combine the toasted corn and peeled cocoa beans and take them to a mill to grind finely. Grind two to three times for a fine texture. Avoid using a blender.
  6. Cool and pack: Let the ground pinolillo cool completely. Pack in airtight bags to preserve aroma and freshness.
  7. Prepare the drink: Mix half a cup of pinolillo powder with a little white sugar, then add cow's milk and/or water according to preference. Blend well until smooth.
  8. Serve: Serve chilled with ice, especially refreshing in hot weather. Enjoy with pancakes or as a standalone drink.
