Ingredients

  1. tofu - 1/2 block (cut into 1cm thick pieces)
  2. cucumber - 1 (julienned)
  3. vinegar - 2 tbsp (for pickling)
  4. water - 2 tbsp (for pickling)
  5. sugar - 1 tbsp (for pickling)
  6. salt - 1 tsp (for seasoning)
  7. carrot - 1/2 (julienned)
  8. cooked black rice - 2 bowls (seasoned with perilla oil and salt)
  9. perilla oil - 1 tbsp (for seasoning)
  10. seaweed sheets - 3 (for rolling)
  11. hijiki - to taste (for filling)

Instructions

  1. Prepare Tofu: Drain tofu and season with salt and pepper.
  2. Stir-fry Carrot: In a heated pan with oil, stir-fry the carrot with some salt.
  3. Assemble Kimbap: Spread black rice on a seaweed sheet, place tofu, carrot, cucumber, and hijiki. Roll tightly.
  4. Slice and Serve: Brush kimbap rolls with perilla oil and slice into bite-sized pieces.
