  2. milk couverture - 50g
  3. white couverture - 50g
  4. butter - 90g (plus extra for the mold)
  5. medium eggs - 2
  6. egg yolk - 1 (from a medium egg)
  7. granulated sugar - 140g
  8. honey - 1 tablespoon
  9. all-purpose flour - 95g
  10. cocoa - 15g
  11. salt - 1/2 teaspoon
  12. water - 500g (for the pressure cooker)

Instructions

  1. Melt chocolate and butter: Melt dark couverture and butter together, either in a microwave or over a double boiler.
  2. Mix wet ingredients: Whisk together eggs, yolk, and granulated sugar, then incorporate the melted chocolate mixture.
  3. Add dry ingredients: Fold in flour, cocoa, salt, and chunks of milk and white chocolate.
  4. Prepare for cooking: Transfer the batter into a buttered mold lined with parchment paper. Place in a pressure cooker with water and cover tightly with aluminum foil.
  5. Cook: Cook in the pressure cooker for 30 minutes. Let cool before cutting into pieces.
  6. Serve: Serve brownie pieces drizzled with melted milk and white chocolate.
