Ingredients

  1. potato - 1+ (preferably in good condition, quantity as desired)
  2. neutral oil - 3L-4L (for frying, such as canola or vegetable oil)
  3. salt - to taste (to taste, plus a pinch for soaking water)
  4. chicken stock - optional (optional, for seasoning)

Instructions

  1. Prepare the Potato: Skin the potato using a mandolin or a knife to get thin, even slices.
  2. Soak the Slices: Place the potato slices in cold water with a pinch of salt. Stir well and leave to soak for 30 minutes.
  3. Rinse and Dry: Rinse the potato slices under tap water until the water runs clear. Lay them out on a paper towel and dry thoroughly.
  4. Fry the Potato Chips: Heat the oil to 160°C and deep-fry the potato slices for 7-10 minutes or until golden and crispy.
  5. Season: Immediately after frying, season the chips with salt, and optionally, with chicken stock powder. Let them cool down completely before serving.
