Ingredients

  1. ham neck - 1 kg (cut into large pieces)
  2. green bell peppers - 400 g (cut into large pieces)
  3. Florina peppers - 400 g (cut into large pieces)
  4. feta cheese - 250 g (cut into small pieces, added at the end)
  5. olive oil - 4-5 tablespoons (used for sautéing)
  6. onion - 1 (cut into large pieces and blended with one green pepper)
  7. paprika - 1 teaspoon (for seasoning)
  8. granulated sugar - a pinch (to balance flavors)
  9. tomato paste - 1 tablespoon (for sauce)
  10. water - 200 g (minimum amount, add more if needed during cooking)
  11. mustard - 1 tablespoon (added after 1 hour of cooking to thicken sauce)
  12. dried oregano - 1 tablespoon (added at the end)
  13. salt - to taste (for seasoning)
  14. freshly ground pepper - to taste (for seasoning)

Instructions

  1. Prepare Peppers: Clean and cut the green and Florina bell peppers into large pieces, removing seeds. Set aside.
  2. Sauté Peppers: Heat olive oil in a pan and sauté the peppers until they soften slightly and take on some color. Remove and set aside.
  3. Prepare Onion-Pepper Puree: Cut one green pepper and one onion into large pieces. Blend them together until smooth. Set aside.
  4. Prepare Pork: Cut the ham neck into large pieces. Season with salt and freshly ground pepper.
  5. Sauté Pork: In the same pan, add olive oil and sauté the pork pieces until browned.
  6. Add Puree and Seasonings: Add the blended onion-pepper mixture to the pork. Stir in paprika, granulated sugar, tomato paste, and water.
  7. Simmer Pork: Cover with a lid and cook over low heat for about 1 hour to 1 hour 20 minutes until the meat softens.
  8. Add Mustard and Peppers: After the initial cooking, add mustard and the sautéed peppers. Cover and cook for another 15-20 minutes.
  9. Finish with Feta and Oregano: Turn off the heat, add dried oregano and feta cheese. Mix gently to warm the feta without melting it completely.
  10. Serve: Serve the pork with peppers and feta alongside rice and fresh oregano leaves.
