Ingredients

  1. cooking oil - 2 tablespoons
  2. chicken qeema (mince), hand chopped - 500 grams
  3. red chilli, crushed - 1.5 teaspoons
  4. dried oregano - 0.5 tablespoons
  5. Himalayan pink salt - 1 teaspoon (to taste)
  6. paprika powder - 0.5 tablespoons
  7. garlic powder - 1 teaspoon
  8. lemon juice - 2 tablespoons
  9. onion, small cubes - 0.5 cup
  10. capsicum (bell pepper), small cubes - 0.5 cup
  11. pizza sauce - 2-3 tablespoons (plus extra for brushing)
  12. fresh coriander (cilantro) or any fresh herbs - handful (chopped)
  13. bread slices - as required
  14. mayonnaise - as required
  15. mozzarella cheese - as required
  16. cheddar cheese - as required
  17. red chilli, crushed - as required (for sprinkling)
  18. dried oregano - as required (for sprinkling)
  19. pepperoni slices - 16 slices

Instructions

  1. Cook Chicken Mince: In a frying pan, heat cooking oil and add the chicken mince. Cook and mix well until the color changes.
  2. Add Spices and Cook: Add crushed red chilli, dried oregano, Himalayan pink salt, paprika powder, garlic powder, and lemon juice. Mix well and cook on medium flame for 4-5 minutes, then increase to high flame and cook until the mixture dries up.
  3. Add Vegetables and Sauce: Add the diced onion, capsicum, and pizza sauce. Mix well and cook for 1-2 minutes.
  4. Add Fresh Herbs and Cool: Add chopped fresh coriander or herbs and mix well. Remove from heat and let the filling cool.
  5. Assemble Sandwiches: Spread mayonnaise on bread slices. Place about 2 tablespoons of the prepared chicken filling on one slice, fold and seal the corners properly.
  6. Prepare for Baking: Place the folded sandwiches on a greased and baking paper-lined tray. Brush the tops with pizza sauce.
  7. Add Cheese and Toppings: Sprinkle mozzarella and cheddar cheese over the sandwiches. Add crushed red chilli, dried oregano, and arrange pepperoni slices on top (16 slices total).
  8. Bake: Bake in a preheated oven at 180°C (356°F) for 15-20 minutes until cheese melts and sandwiches are golden.
  9. Garnish and Serve: Garnish with fresh basil leaves and serve hot with tomato ketchup.
