Ingredients

  3. heavy cream - 2 cups (for panna cotta)
  4. sugar - 2/3 cup (for sweetness)
  5. salt - pinch (for flavor)
  6. vanilla extract - splash (for flavor)
  7. goat cheese - 4 oz (for flavor)
  8. pomegranate juice - 1/3 cup (for caviar)
  9. coconut sugar - 1 tbsp (for caviar)
  10. rosemary - 1 sprig (for caviar)
  11. lemon juice - 1/2 (for caviar)
  12. agar agar powder - 1/4 tsp (for caviar)
  13. neutral oil - 2 cups (for caviar)

Instructions

  1. Bloom Gelatin: Bloom gelatin in buttermilk.
  2. Heat Cream: Combine cream, sugar, salt, and vanilla, then heat until simmering.
  3. Combine Mixtures: Whisk in gelatin mixture and goat cheese until smooth.
  4. Pour and Chill: Pour into molds and refrigerate until set.
  5. Make Caviar: Combine juice, sugar, rosemary, lemon juice, and agar agar, then drop into cold oil to form caviar.
  6. Serve: Unmold panna cotta and top with pomegranate caviar.
