Prepare onion and garlic: Chop the onion by smashing it against a surface. Sauté the onion in a pan over medium heat until it starts to brown. Crush and chop the garlic, then add it to the pan and cook until fragrant but not burnt.
Cook ground beef: Add 1 pound of ground beef to the pan and flatten it out. Season with salt, pepper, and optional spices such as cumin, chili powder, smoked paprika, and red wine vinegar. Cook until the beef is fully cooked.
Add arrabbiata sauce: Add arrabbiata sauce to the cooked beef mixture and cook together until flavors meld, just before the mixture becomes boring. Remember to add the sautéed onions and garlic back into the sauce and mix briefly.
Prepare ricotta mixture: In a bowl, mix ricotta cheese with 1 egg and grated garlic. Optionally, add basil if available. Mix well.
Prepare noodles and cheese: Lay out lasagna noodles on paper towels to dry. Grate mozzarella cheese and set aside.
Assemble the dish: Spray or grease a baking dish. Spread a thin layer of the beef sauce on the bottom. Add a layer of noodles, then spread a layer of ricotta mixture, followed by mozzarella cheese. Add a layer of beef sauce. Repeat layering with noodles, ricotta, mozzarella, and beef sauce until ingredients are used up, finishing with a cheese layer.
Bake: Preheat oven to 400°F (200°C). Bake the assembled dish until the cheese is melted and golden, about 30-40 minutes.
Cool and serve: Remove from oven and let cool for at least 20 minutes before cutting and serving to allow the layers to set and avoid burning your mouth.
