Ingredients

  1. mutton - 500 g
  2. black cardamom - 4
  3. cinnamon sticks (small) - 4 pieces
  4. green cardamom - 6
  5. mace - 2
  6. cumin seeds - 1/4 teaspoon
  7. saffron - a pinch
  8. Kashmiri red chili powder - 1 1/2 tablespoons
  9. ginger powder - 1/2 tablespoon
  10. fennel seed powder - 1/4 tablespoon
  11. salt - watch the video to see (to taste)
  12. hing (asafoetida) - a pinch
  13. ghee - 2 tablespoons
  14. turmeric - 1/2 teaspoon (optional)

Instructions

  1. Prepare Spice Mixture: In a bowl, add hing, Kashmiri chili powder, ginger powder, fennel seed powder, and water. Mix well to form a paste.
  2. Make Masala Powder: In a blender, add cinnamon sticks, green cardamom, mace, and cumin seeds. Blend to make a coarse powder.
  3. Cook Mutton: Heat ghee in a pan, add black cardamom, and meat pieces. Cook on a slow flame until the meat is brown in color.
  4. Add Spice Mixture: Add the prepared spice mixture of Kashmiri chili, saffron, water, and salt to the meat. Mix well, cover, and cook for 45 minutes until the meat is tender.
  5. Final Cooking: Add the made masala powder to the pan, mix well, and let it cook for another 30 minutes.
