Ingredients

  1. Cooking oil - 3-4 tablespoons (for filling)
  2. Onion - 2 medium (chopped)
  3. Beef mince - 350 grams (qeema)
  4. Garlic - 1 tablespoon (crushed)
  5. Ginger - ½ tablespoon (crushed)
  6. Green chilli - 1½ tablespoons (chopped)
  7. Himalayan pink salt - 1 teaspoon (or to taste)
  8. Coriander seeds - 1 tablespoon (crushed)
  9. Cumin powder - 1½ teaspoons (zeera powder)
  10. Red chilli powder - 1½ teaspoons (lal mirch powder)
  11. Garam masala powder - 1 teaspoon
  12. Red chilli - ½ teaspoon (crushed)
  13. Carom seeds - ¼ teaspoon (ajwain)
  14. Water - 2-3 tablespoons (or as required)

  16. Capsicum - ¼ cup (cubes)
  17. Fresh coriander - handful (chopped)
  18. Yogurt - 1 cup (for sauce)

  21. Cumin seeds - 1 teaspoon (roasted & crushed for sauce)
  22. Fresh coriander - 1 tablespoon (crushed for sauce)
  23. Garlic paste - 1 teaspoon (for sauce)
  24. Himalayan pink salt - ¼ teaspoon (or to taste for sauce)
  25. Mint leaves - 1 tablespoon (crushed for sauce)
  26. Warm water - ½ cup (for dough)
  27. Caster sugar - ½ tablespoon (bareek cheeni)
  28. Instant yeast - 2½ teaspoons (khameer)
  29. Yogurt - ½ cup (for dough)
  30. Cooking oil - 2 tablespoons (for dough)
  31. Himalayan pink salt - 1½ teaspoons (or to taste for dough)
  32. All-purpose flour - 2½ cups (sifted)
  33. Wheat flour - 1 cup (sifted)
  34. Water - 3-4 tablespoons (or as required for dough)
  35. Cooking oil - 1 teaspoon (for greasing)

  38. Egg yolk - 1
  39. Milk - 1 tablespoon

Instructions

  1. Prepare Filling: In a frying pan, add cooking oil, onion, mix well & sauté until translucent.
  2. Prepare Filling: Add beef mince, garlic, ginger, green chilli & mix well until it changes color.
  3. Prepare Filling: Add pink salt, coriander seeds, cumin powder, red chilli powder, garam masala powder, red chilli crushed, carom seeds, mix well & cook for 2-3 minutes.
  4. Prepare Filling: Add water & mix well, cover & cook on low flame for 4-5 minutes then cook on high flame until it dries up.
  5. Prepare Filling: Turn off the flame, add cream, capsicum, fresh coriander & mix well.
  6. Prepare Filling: Turn on the flame & cook for 1-2 minutes & set aside.
  7. Prepare Yogurt Sauce: In a bowl, add yogurt, cream, green chilli, cumin seeds, fresh coriander, garlic paste, pink salt, mint leaves, whisk well & set aside.
  8. Prepare Dough: In a bowl, add warm water, caster sugar, instant yeast & mix well, cover & let it bloom for 5-10 minutes.
  9. Prepare Dough: Add yogurt, cooking oil, pink salt & whisk well.
  10. Prepare Dough: Add all-purpose flour, wheat flour & mix well.
  11. Prepare Dough: Gradually add water & knead until dough is formed, grease with cooking oil, cover & let it proof for 1 hour or until double in size at warm place.
  12. Prepare Dough: Knead dough again until smooth.
  13. Shape Naans: Divide the dough into two parts, take one part (170g), sprinkle dry flour & roll out with the help of rolling pin.
  14. Shape Naans: Cut two circles with the help of the cutter (7 inches & 4.5 inches).
  15. Fill Naans: Add cheddar cheese & mozzarella cheese on the sides of the circle, apply water at the edges & fold over the cheese & seal properly.
  16. Fill Naans: Prick with fork, add prepared filling, place another small rolled dough over it, seal properly & prick with the help of fork.
  17. Prepare Egg Wash: In a small bowl, add egg yolk, milk & whisk well.
  18. Prepare Naans: Apply egg yolk mixture & sprinkle sesame seeds (makes 5).
  19. Bake Naans: Keep a bowl of water in oven, it helps create steam & you will have crispy crust on naan.
  20. Bake Naans: Place naan on baking tray (lined with baking paper) & bake in preheated oven at 180C for 20-25 minutes.
  21. Air Fry Naans: Place naan in air fryer basket (lined with baking paper) & air fry at 170C for 7-8 minutes.
  22. Serve: After baking or air frying, apply melted butter, sprinkle fresh coriander, cover & let it rest for 5 minutes & serve!
