  2. coconut milk - 1 cup (full-fat, divided for mango blend and matcha mixture)
  3. lemon juice - 1 tablespoon (freshly squeezed)
  4. matcha powder - 1 tablespoon (sweetened for matcha coconut milk mixture)
  5. sweetener - 1-2 tablespoons (such as maple syrup or sugar, to sweeten matcha coconut milk mixture)

Instructions

  1. Prepare mango mixture: Blend mango chunks with half of the coconut milk and lemon juice until smooth.
  2. Prepare matcha mixture: Mix matcha powder with the remaining coconut milk and sweetener until well combined and smooth.
  3. Layer popsicles: Pour a layer of mango mixture into popsicle molds and freeze until solid.
  4. Add matcha layer: Pour a layer of matcha coconut milk mixture over the frozen mango layer and freeze until solid.
  5. Repeat layering: Continue layering mango and matcha mixtures, freezing each layer separately to create color contrast.
