Ingredients

  1. fermented kimchi - 2 cups (roughly chopped)
  2. middle-thickness noodles - 200g (200g)
  3. cucumber - 1/2 (finely julienned)
  4. gochujang - 2 tbsp (Korean chili paste)
  5. corn syrup - 2 tbsp (for sweetness)
  6. soy sauce - 1 tbsp (for seasoning)
  7. sugar - 1 tbsp (for sweetness)
  8. vinegar - 2 tbsp (for acidity)
  9. cooking wine - 1 tbsp (for flavor)
  10. sesame oil - 1 tbsp (for flavor)
  11. pepper - watch the video to see (to taste)

Instructions

  1. Prepare the Cucumber and Kimchi: Finely julienne the cucumber and roughly chop the kimchi.
  2. Mix the Sauce: In a bowl, combine the chopped kimchi and all the sauce ingredients.
  3. Cook the Noodles: Boil water and add the noodles, stirring to prevent sticking. When boiling, add cold water 2-3 times until fully cooked.
  4. Rinse the Noodles: Rinse the noodles in cold running water until no longer starchy, then drain.
  5. Combine Noodles and Sauce: Add the noodles to the sauce and toss to coat.
  6. Serve: Plate the bibim guksu and top with julienned cucumber and sesame seeds.
