Ingredients

  2. chocolate bitters - 3 dashes (3 dashes)
  3. bergamot bitters - 3 dashes (3 dashes; can substitute with Earl Grey bitters or orange bitters)
  4. carbonated water - a splash (a splash to help dissolve sugar)
  5. bourbon whiskey - 2 oz (60 ml) (preferably 100 proof (50% ABV), e.g., Old Forester)
  6. arranged rum - ½ oz (15 ml) (spiced and fruit-infused rum, about 2-year-old navy strength (57% ABV) recommended; e.g., banana spice rum)
  7. lemon peel - 1 peel (for garnish and expressing oils)
  8. orange peel - 1 peel (for garnish and expressing oils)

Instructions

  1. Prepare the sugar and bitters: Place the sugar cube (or teaspoon of granulated sugar) in a mixing glass. Add 3 dashes of chocolate bitters and 3 dashes of bergamot bitters. Add a splash of carbonated water to help dissolve the sugar and stir until it forms a paste.
  2. Add spirits: Pour 2 oz (60 ml) bourbon whiskey and ½ oz (15 ml) arranged rum into the mixing glass.
  3. Mix the cocktail: Add ice to the mixing glass and stir gently to chill and dilute slightly, but do not over-stir as the cocktail will be served over ice.
  4. Serve and garnish: Strain the cocktail into a glass over fresh ice. Garnish with expressed lemon and orange peels by twisting them over the drink to release oils, then add them as decoration.
